Mini Lobster Rolls Recipe

A couple of months ago I had my very first lobster roll thanks to Uber Eats.  They had always looked so good but the opportunity to try one had just never presented itself.  Well I absolutely loved it.  This past weekend I got a hankering for one of these delicious sandwiches and I figured why not try making my own.  Since this was a craving, I decided to up the ante a bit on the mixture you toss the lobster in.  I decided to add in my favorite under-appreciated sandwich ingredient, the caper, as well as lemon zest to give it a little bite of citrus.  This is an incredibly easy recipe to make, and super quick.  It would be perfect for a lunchtime picnic or cookout this Summer.

Mini Lobster Rolls

Ingredients:
2 lbs. Lobster meat, cooked & peeled
4 Tbsp Mayonnaise
2 Tbsp Capers
Lemon Zest of 1 Lemon
1 Package of Hot Dog Buns
Parsley
Salt & Pepper, to taste

Directions:
1.  In a large bowl, whisk together mayo, caper, lemon zest, salt, and pepper
2.  Add lobster meat and mix until all meat is evenly coated
3.  Cut hot dog buns in half, crosswise; spoon in desired amount of coated lobster meat
4.  Top with a small sprig of parsley and serve
