For those of you who are new here, my friends and I have an annual Christmas Cookie Competition that we take VERY seriously. Planning and trash talk start in July. Obviously we couldn’t responsibly have a competition this year but that doesn’t mean I’m going to skip a year to flex my cookie skills. I actually made these cookies over break last year. I walked into the Publix near my parent’s house and was overtaken by the smell of butterscotch. I located the Aprons kiosk and found they were baking the most mouth-wateringly delicious cookies. I bought all of the accoutrements and used them as a coping mechanism during last year’s Clemson-Ohio St. game (not sure if the same will work for this year’s game). Here’s the recipe I used, though I use 1/4 cup each of toffee, butterscotch, and white chocolate instead of the 3/4 cup toffee the recipe calls for. Judgement call all bakers have to make.
