I’ve always been rather indifferent to eating salads, since I’ve never really understood them as a meal. When I want vegetables, I prefer them cooked in butter or animal fat (#southern). But what I’ve started to realize is that I can really make a salad anything I want it to be. I decided to put together a “superfood” salad that combined some of the best ingredients for those of us who aren’t usually diet prone. This included strawberries (major source for antioxidants), avocados (natural appetite suppressant), almonds (fiber & protein), and spinach (Iron and Vitamins C & K), not to mention a dressing that coincides perfectly with the salad’s theme.
Superfood Salad
Ingredients:
10 oz. Spinach
4 oz. Sliced Almonds
1 pint Sliced Strawberries
1 diced Avocado
1 cup Olive Oil
1 Lemon, sliced in half, crosswise
2 Tbsp Oregano
Directions:
1. In a large bowl, mix spinach, almonds, strawberries, and avocado; toss to mix
2. In the bowl a juicer, pour the olive oil and oregano; place top of juicer in place and juice both halves of the lemon; stir together
3. Coat salad in dressing, leaving remaining dressing on the side to be added again later; Serve!
