When I first moved to Atlanta, my new group of girlfriends and I loved having big mid-week get-togethers for gossip, food, and TV. It’s how we got to know each other. Many years later, we still enjoy our gab sessions with cocktails and snacks even if they aren’t as often as we’d like. An easy snack to lay out for has always been chips and salsa, especially at the end of a long work day, but I decided to spruce things up with some homemade salsa and Megan’s to.die.for margaritas. The salsa is really easy to make if you have a food processor or immersion blender. I used less cilantro than the recipe calls for because 1) I’m not a huge fan of cilantro to begin with and 2) the smell of the fresh leaves were a little too potent for me to continue chopping to a full 1/3 cup. Depending on the tomatoes you use, you may need to add a dash of sugar while the salsa is simmering to try and cut a bit of the acid. We had such a great time laughing, gabbing, and noshing that by the end of the night I barely had any salsa leftover. Looks like I’ll be making another batch soon.
