Smoked Salmon Cucumber Stacks

Salmon Cucumber Stacks AppetizerSmoked salmon can be a tricky item to serve as it can easily put some people off, so it’s all about the accoutrements you plate it with.  Sure a bagel and some cream cheese are the classic partners for smoked salmon but what if you’re wanting something a bit more elevated and fresh.  I find that this recipe is great for parties with heavy hors d’oeuvres.  The smoked salmon goes really well when mixed with the green onions, dill, and capers.  The crisp cucumber keeps the bite fresh and gives it a good crunch.  I once served this little stack at a Christmas party and found several guests in my kitchen huddled around and feasting on the excess salmon mixture.  It’s that good.
