Champagne Mint Granita

I always find it fun to take things from my childhood and give them a bit of an adult-like twist.  Who didn’t love a good slushy, or flavored snow cone during the summer?  And so, I present to you, a very adult slushy!  Now don’t be put off by the green color, it’s all natural I assure you.  This granita recipe can serve as a great digestif for a summer dinner party.  The prosecco definitely hits your taste buds up front, but the cool mint after taste is well worth the prep time for this little indulgence.

Champagne Mint Granita

Ingredients:
3/4 cup Sugar
1 cup fresh Mint
3 cups Dry Champagne or Prosecco
1/4 Tsp Lemon Zest
1 Tblsp Lemon Juice

Directions:
1.  In a food processor, pulse the mint and sugar until well blended
2.  In a medium bowl, stir together the champagne, lemon zest, lemon juice, and mint mixture until all of the sugar is dissolved, about 10 minutes
3.  Pour the mixture into a 9-inch square nonreactive metal baking pan and place it in the freezer
4.  Using a fork, stir the mixture every few hours or so; the bottom will tend to be more syrupy, so be sure to mix it up into the icier portions; keep repeating the process every 2 hours until the granita has uniform flakes of flavored ice all the way through it, which will take anywhere between 12-24 hours depending on your preferred consistency
