Watershed on Peachtree Fried Chicken

If there’s one thing we Southerners know, it’s good fried food, chief among these fried chicken.  As you can imagine, in Atlanta it isn’t difficult to find good fried chicken, but we’ll get to that further down in this post.  Watershed is a great neighborhood spot right on Peachtree St., courtesy of Emily Saliers of the Indigo Girls (yea, those Indigo Girls).  This is some knock-your-socks-off amazing southern farm-to-table food (THAT fried chicken) with a bar that rivals and surpasses a majority of it’s contemporaries.  If you’re still not sold (which I can’t imagine), Conde Nast Traveler named it as one of the Best New Restaurants in the World!

Since Watershed is nestled between Midtown and Buckhead on THE busiest road in town, it’s crucial that they have a bar with cocktails that can support a bustling happy hour.  The cocktails are in a class all on their own.  I got to talk with some of the bartenders who helped create some of Watershed’s best known cocktails, like the Provençal, a Watershed staple.  When creating a cocktail for their extensive menu, many hours of thought, preparation, and coordination goes in to making a libation that utilizes unique and cohesive ingredients that can make your cocktail the standout of your experience, but also can pair beautifully with any of the kitchen’s southern fare.  These drinks are next level delicious, and are worth the traffic on Peachtree all on their own.

So back to the chicken.  As much time and care that Watershed puts towards their drink menu, they put the same level of attention, and likely more-so, towards their amazing fried chicken.  And here’s the mindblower: it’s not even on the menu!  So this chicken is now literally the best worst-kept secret in Atlanta.  Because it takes 3 days of brine, baths, and frying to prepare this dish, Watershed only serves it on Wednesdays by request only.  And let me warn you; get there early because these little babies go quick!  As the cherry on top of these perfectly fried gems, they are served with two fluffy buttermilk biscuits and your own jar of honey!  That little detail just never gets old.
