Growing up in Charleston, I love seafood. I could seriously eat it everyday. I have my usual staples like catfish, salmon, and flounder and sometimes, I can get in a bit of a rut with how I prepare them. But when I saw this recipe on Instagram, I loved that it used a fish I had zero experience with (mahimahi, though you can use any firm white fish) and that the sauce was basically a retooled piccata sauce. My fruzmate (friend + cousin + roommate) Lisa had the great idea to serve it over a bed of her roasted green beans, and she was spot on. This is a quick meal, relatively healthy I would think, and is great for a weekday dish.
